64 oz. vegetable juice, low sodium
15 oz. can of corn, low sodium
15 oz. can of black beans, low sodium
15 oz. can of diced tomatoes, low sodium
1 packet of taco seasoning, low sodium
1 large onion
1 lb. ground beef, 80% lean
½ tbsp. sugar
1 tsp. salt
1 tsp. pepper
Large pot or dutch oven
Brown ground beef in pot over medium heat. Since the fat content is high in 80% ground beef, there’s no need to add more oil if you don’t want to.
Chop onion, about ¼ inch to ½ pieces.
Transfer the ground beef from the pot into the strainer to drain. Put pot back on stove on medium heat.
Add chopped onion to pan. Sauté for 3-4 minutes.
Open canned corn, and beans and dump onto ground beef in the colander, so the excess liquid drains out. Add contents of strainer to the pot.
Add the taco seasoning, salt, pepper, garlic, and sugar to the pot. Add the entire bottle of vegetable juice to the pot.
Let pot simmer for 30 minutes.
Season to taste with added salt and pepper. Add hot sauce to make spicier, and sugar to negate spiciness.
Serve soup with tortilla chips, shredded cheese, and sour cream. Enjoy!
